  • 12 oz penne pasta ๐Ÿ
  • 1 lb ground beef or turkey ๐Ÿฅฉ
  • 1 onion, chopped ๐Ÿง…
  • 1 red bell pepper, chopped ๐ŸŒถ๏ธ
  • 1 can (10 oz) red enchilada sauce ๐Ÿฅซ
  • 1 cup shredded cheddar cheese ๐Ÿง€
  • 1 cup sour cream
  • Chopped fresh cilantro for garnish ๐ŸŒฟ

๐Ÿฅฃ Instructions:

  1. Cook the penne pasta according to package instructions, then drain and set aside.
  2. In a large skillet, brown the ground beef or turkey over medium heat, breaking it apart as it cooks.
  3. Add chopped onions and red bell pepper and sautรฉ until softened.
  4. Stir in the enchilada sauce, sour cream, and half of the shredded cheddar cheese.
  5. Add the cooked pasta to the skillet and mix until everything is well combined.
  6. Transfer the mixture to a baking dish and sprinkle the remaining cheese on top.
  7. Broil in the oven until the cheese is bubbly and golden.
  8. Garnish with chopped cilantro before serving.
