Enchilada Pasta ๐ถ๏ธ๐๐ง
๐ Ingredients:
- 12 oz penne pasta ๐
- 1 lb ground beef or turkey ๐ฅฉ
- 1 onion, chopped ๐ง
- 1 red bell pepper, chopped ๐ถ๏ธ
- 1 can (10 oz) red enchilada sauce ๐ฅซ
- 1 cup shredded cheddar cheese ๐ง
- 1 cup sour cream
- Chopped fresh cilantro for garnish ๐ฟ
๐ฅฃ Instructions:
- Cook the penne pasta according to package instructions, then drain and set aside.
- In a large skillet, brown the ground beef or turkey over medium heat, breaking it apart as it cooks.
- Add chopped onions and red bell pepper and sautรฉ until softened.
- Stir in the enchilada sauce, sour cream, and half of the shredded cheddar cheese.
- Add the cooked pasta to the skillet and mix until everything is well combined.
- Transfer the mixture to a baking dish and sprinkle the remaining cheese on top.
- Broil in the oven until the cheese is bubbly and golden.
- Garnish with chopped cilantro before serving.
